Banana Muffins

When I have too-ripe bananas I usually:
1. freeze them for smoothies
2. make banana bread with them
3. or make these very-low-sugar banana muffins.

I was in the mood for muffins, but I couldn't use the no-sugar recipe because I was out of sour cream, so I tried a new recipe.

These were good.  I cut down the sugar from the original recipe, hoping my bananas were sweet enough and they were.

1 1/2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large ripe bananas
1/2 cup white sugar
1 egg
1/3 cup butter melted

Mix together and pour into greased muffin tins.  Bake at 350 for 25 minutes.
(Yield : 12.)

  2. Perfect timing Sarah! I have brown bananas on my counter that I was going to make something with today, but I wasn't sure what to make. I'm sure my kids will thank you too after school.

  7. We love banana muffin here as well. I am going to give these a try...I like that they do not have sugar in them. I am trying to cut back on sugar here but it is so hard because sugar is in everything!

  9. I just made these this morning, except with the crumb topping (banana crumb muffins from allrecipes.com). Super yummy. I might have just had two of them as a before-bed-snack...

  10. These were great- sweet without the excessive sugar, just like you said. I added a dash of vanilla to mine as well. All 4 kids and the husband gobbled them up- even the baby who isn't much of an eater yet.
